Yes. Syncio syncs at the variant level. Stock updates apply to the specific SKU that sold, not just the parent product. This includes all standard WooCommerce variable product types.

Yes. You choose which products to sync from the source site. Retailers or destination sites can also choose which products they import. You're not forced into a full catalogue sync.
